Rustic Ham + Corn Chowder


Here is a simple and satisfying chowder that you can practice your knife skills to prepare. The goal is to plank, stick and cube the Yukons into nice 1/2 inch dice and the onion and ham into a small 1/4 inch dice. It is also an excellent knife skill practice to cut the corn off the 4 cobs.


  1. Put 2 tbsp EVO into large soup pot and saute onion dice for 5 mins
  2. Add scraped reserved corn cobs, ham rind and 3 cups of water and simmer for 7 mins
  3. Remove cobs + rinds. Add the yukon dice and cook until almost tender
  4. Add corn, ham and cream and simmer until tender about 5 mins. Adjust sea salt + pepper to taste

This rich chowder may become a favorite during corn season and will improve your dicing and cubing skills considerably. Enjoy.
